White sparkling wine – Ancestral method – 100% native monovarietal white grape

Wine made from 100% of a single native white grape variety. Contact on the skins during manual pressing only, from which only the flower must is taken for this wine. It ferments spontaneously with use of only indigenous yeasts. Once it reaches the right level of sugars it is bottled and fermentation ends in the bottle.
It remains on the lees, not disgorged.
No added sulfites. Only sulfites naturally contained in the wine are present.
