Our red wines are the product of a young vineyard planted in 2015, a regular guyot espalier system vineyard renewed every year. Vinification is made in terracotta amphoras, with frequent pump-overs, pressings and also delestage for some varieties. Wines are added a small amount of sulphites, and are never filtered nor clarified. They undergo a skin fermentation and stay on their lees, with periodical batonnages to ensure perfect conservation. They typically undergo only one racking.
The possible presence of sediments and lees is normal and due to the lack of filtering, clarifying and other artificial processes.
